I'm new to the techie world with regard to computer support and need a simple question answered:
When I install my image copying software, do I install it on my computer, my external hard drive where I'm going to copy the image to, or both? |

You should install it in the same place where you have your other software installed. In this case on your computer. Assuming it is free software then you could also put in on the external hard drive. If it is paid then there might be limitations on how many copies you can install.
Normally, drive imaging/cloning programs allow you to create a bootable disk or USB stick that is independent of the imaged drive (in your computer) and the drive image (on the external drive). Bootable media is used to restore the drive images in the event of a breakdown. You will see this if you read the reviews of Best Free Drive Cloning Program.

.You should install the drive imaging software on your computer... normally, like any other regular software. The image that you make however, should be kept on a drive, different from which you wish to restore the image on, in case of a mishap. Like, if you have taken an image of drive C: ... then put the image on another drive D:, or E:, etc. If you have an external drive, with enough space on it, it's always good to have the image backup there. As Remah posted, there are options to make a recovery CD/USB, from which you can boot the computer and restore the image. So, make sure you build that recovery disk, and keep it safe with you.
