OK, so got this worked out now thanks to some timely help from their forum.

You can lock your widgets via the panel settings - "more settings". Thereafter, to unlock you need to go into the folder view settings and the unlock option will be at the top. They built in this safety feature to prevent users inadvertently deleting all their stuff. Now I can delete whichever of the default panel icons I don't need, in addition to those I added myself.
Buy a Hoover and prove technology sucks.
