OK, I'll go first.

Akismet
- anti-spam. Don't think I could do a WP site without this. Want to try Mollom next time though.

Platinum SEO
- for the seo of course. All DB-driven sites are poor out of the box, you have to fix all the loose ends with plugins, and this one does the seo fine.

What plugins are best for WP in blog mode?
What plugins are best for WP in micro-cms mode?
