I haven't tried it but Express Scribe Transcription Playback Software was recently mentioned at MakeUseOf.

if you are native english speaker and use windows 7 then you can try below:
plug in microphone and type 'sound' without quotes in start menu and select 'sound' and press enter then go to recording -> select microphone -> configure then you should see how to instruct your computer using your voice such as typing. however I find it difficult because windows was resisting to understand my voice. |

This is still very much a developing field.
I've looked into it in order to develop some STT software, but at the moment, it's not practical to publish it as freeware, which I was hoping to do (free & pro). Give it a few years and the field will mature enough for there to be free software available.
