This step by step article details how to make stitched panorama and mosaic photos using free software.

Over at wikiHow there's an article that details how to use free software program hugin to put together a mosaic of photographs into a whole panorama photo as well as use it to stitch a series of photos in to one panoramic photo.

The article has some good suggestions for camera settings to get the best results for panorama shots, then has a good step by step tutorial on using hugin to make panoramas and mosaics.

hugin is open source software, and supports Windows, Mac OSX, and Linux.
The article doesn't say which platform version was used to create the thumbnails in the articles, but all of them should be similar enough so that following the directions shouldn't be a problem.
