...records ALL keystrokes, passwords, and web sites used on my computer while I'm not using it. Keep an eye on my daughter's activities and my fiance's activities.

This free program Home Keylogger is a good try, easy to use, can run in hidden mode.

Bear in mind that most keyloggers can be detected by anti-malware programs such as Windows Defender, AVG, a-squared, etc.

For it to run properly, you have to add it to the allowed items in the anti-malware programs.
